  • 1 egg
  • 1 cup panko breadcrumbs

For the Bang Bang Sauce:

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar

For Assembly:

  • 8 slider buns
  • 1 cup shredded lettuce or coleslaw mix
  • 1/2 cup sliced pickles (optional)
  • 1/2 cup diced green onions (for garnish)

Instructions

Step 1: Prepare the Chicken

  1. In a bowl, combine buttermilk and the egg. Add chicken pieces and let them soak for at least 30 minutes (or up to 2 hours).
  2. In a separate bowl, mix flour, cornstarch, salt, black pepper, garlic powder, and paprika.
  3. Remove chicken from the buttermilk mixture, letting excess drip off, and coat in the flour mixture.
  4. Press the coated chicken into panko breadcrumbs for extra crispiness.

Step 2: Fry the Chicken

  1. Heat vegetable oil in a deep pan or fryer to 350°F (175°C).
  2. Fry the chicken in batches for 3-4 minutes per side, until golden brown and cooked through.
  3. Transfer to a paper towel-lined plate to drain excess oil.

Step 3: Make the Bang Bang Sauce

  1. In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth.

Step 4: Assemble the Sliders

  1. Toss the crispy chicken pieces in the Bang Bang sauce until fully coated.
  2. Toast the slider buns for a slight crunch (optional).
  3. Layer each bun with shredded lettuce or coleslaw, a piece of coated chicken, and pickles if using.
  4. Garnish with diced green onions and serve immediately.
