- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/2 cup blueberries (fresh or frozen)
- 1/4 cup almond butter (or peanut butter)
- 1/4 cup honey or maple syrup
- 1/4 tsp cinnamon
- 1/4 tsp vanilla extract
- 1/4 tsp baking powder
- A pinch of salt
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Mash the bananas in a medium-sized bowl until smooth and creamy.
- Mix the wet ingredients: To the mashed bananas, add almond butter (or peanut butter), honey (or maple syrup), cinnamon, vanilla extract, and a pinch of salt. Stir until well combined.
- Add the dry ingredients: To the banana mixture, add rolled oats, baking powder, and blueberries. Stir gently until evenly incorporated.
- Form the cookies: Using a spoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of the spoon.
- Bake for 12–15 minutes or until the edges are golden brown and the cookies feel firm to the touch.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
