Description

A healthier twist on the classic shrimp toast, this baked version features shrimp mixed with savory ingredients, spread over crispy bread for a golden, flavorful appetizer or snack.


Ingredients

  • 8 oz shrimp (peeled and deveined)
  • 1/4 cup mayonnaise
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp grated fresh ginger
  • 1 garlic clove (minced)
  • 2 tbsp chopped green onions
  • 1 tbsp chopped cilantro (optional)
  • 4 slices white or whole wheat bread (preferably a bit stale)
  • Salt and pepper to taste

 

  • Olive oil or melted butter (for brushing)

Instructions

 Prepare the Shrimp Mixture:

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Chop the shrimp into small pieces or pulse them in a food processor until coarsely chopped.
  • In a bowl, combine the shrimp, mayonnaise, soy sauce, sesame oil, grated ginger, minced garlic, green onions, and cilantro (if using). Season with salt and pepper to taste. Mix well.

2. Prepare the Bread:

  • Cut the bread slices into halves or quarters based on your preferred serving size.
  • Lightly toast the bread slices in a toaster or on a griddle for 1-2 minutes to firm them up.

3. Assemble the Toasts:

  • Spread the shrimp mixture generously over the top of each bread slice, pressing it down slightly to ensure it sticks.
  • Place the bread slices on the prepared baking sheet.

4. Bake:

  • Brush the shrimp toasts lightly with olive oil or melted butter to enhance crispness and flavor.
  • Bake for 10-12 minutes, or until the shrimp mixture is cooked through and the bread is golden brown.

5. Serve:

 

  • Remove from the oven and allow the toasts to cool for a few minutes before serving.

  • Spicy Shrimp Toast: Add a teaspoon of sriracha or chopped red chili to the shrimp mixture.
  • Cheese Topping: Sprinkle Parmesan or mozzarella on top before baking for a cheesy twist.
