Ingredients
Scale
- 4 medium potatoes, peeled and diced
- 1 small onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 4 cups chicken or vegetable broth
- 1 cup cooked ham or bacon, diced (optional)
- 1 cup whole milk or heavy cream
- 2 tablespoons butter
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon dried thyme
- 1 cup frozen corn or peas (optional)
Instructions
Step 1: Prepare the Vegetables

- Add the chopped onions, carrots, and celery. Sauté for 3–4 minutes until softened.
Step 2: Cook the Base
- Add the diced potatoes and broth to the pot.
- Bring to a boil, then reduce heat and simmer for about 15 minutes, or until the potatoes are tender.
Step 3: Make the Creamy Roux
- In a small saucepan, melt the remaining butter over low heat.
- Stir in the flour, cooking for about a minute to remove the raw taste.
- Gradually whisk in the milk or cream, stirring continuously until thickened.
Step 4: Combine Everything
- Pour the creamy mixture into the soup pot and stir well.
- Add salt, pepper, and thyme. If using ham or bacon, stir it in now.
- Let the soup simmer for another 5 minutes to meld flavors.
Step 5: Final Touches
- Stir in frozen corn or peas, if using, and cook for an additional 2–3 minutes.
- Adjust seasoning to taste and serve hot.

- Vegetarian Version – Use vegetable broth and skip the meat.
