- 1 pound ground beef or ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups cooked rice
- 1 cup shredded carrots
- 1 cup chopped cabbage
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon nutmeg (optional)
- 1/2 cup breadcrumbs (optional for topping)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
- Add diced onion and minced garlic to the skillet, cooking until softened (about 3 minutes).
- In a large mixing bowl, combine the cooked meat mixture with rice, carrots, cabbage, diced tomatoes, cream of mushroom soup, shredded cheese, salt, pepper, paprika, thyme, and nutmeg (if using). Stir well.
- Transfer the mixture into the prepared baking dish, spreading evenly. If using, sprinkle breadcrumbs on top.
- Bake for 30-35 minutes, until the cheese is melted and bubbly.
- Let the casserole rest for 5 minutes before serving. Enjoy warm!
