Description

  • 1 pound ground beef or ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked rice
  • 1 cup shredded carrots
  • 1 cup chopped cabbage
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  • Add diced onion and minced garlic to the skillet, cooking until softened (about 3 minutes).
  • In a large mixing bowl, combine the cooked meat mixture with rice, carrots, cabbage, diced tomatoes, cream of mushroom soup, shredded cheese, salt, pepper, paprika, thyme, and nutmeg (if using). Stir well.
  • Transfer the mixture into the prepared baking dish, spreading evenly. If using, sprinkle breadcrumbs on top.
  • Bake for 30-35 minutes, until the cheese is melted and bubbly.
  • Let the casserole rest for 5 minutes before serving. Enjoy warm!
