Ingredients

Scale
  • 1 pound ground beef
  • 2 cups diced potatoes (russet or Yukon gold)
  • 1 cup chopped carrots
  • 1 cup diced butternut squash
  • 1 cup sliced mushrooms
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1 tablespoon Worcestershire sauce
  • 1 cup shredded cheddar cheese (optional)
  • 1/2 cup breadcrumbs (optional, for topping)
  • 1 tablespoon olive oil

Instructions

  1. Preheat the Oven: Set to 375°F (190°C) and grease a large baking dish with olive oil.
  2. Cook the Ground Beef: Brown the beef in a skillet over medium heat, breaking it up. Drain excess grease.
  3. Sauté Aromatics: Add onion and garlic to the skillet; cook until softened (about 3 minutes).
  4. Prepare Vegetables: Toss potatoes, carrots, butternut squash, and mushrooms with olive oil, salt, pepper, thyme, and paprika in a large bowl.
  5. Assemble the Bake: Layer the beef mixture in the greased baking dish, then top with seasoned vegetables.
  6. Add Sauce: Mix beef broth, heavy cream, and Worcestershire sauce in a bowl; pour over the dish.
  7. Bake: Cover with foil and bake for 35-40 minutes. Remove foil, sprinkle cheese and breadcrumbs (if using), and bake uncovered for another 10-15 minutes until golden and bubbly.
  8. Serve: Let rest for 5 minutes before serving.
