- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon (optional)
- 2 large eggs
- 1/2 cup milk (or almond milk for dairy-free)
- 1/3 cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen cherries, pitted and chopped
- 3/4 cup dark chocolate chips
- 1/2 cup sliced almonds
Instructions
Step 1: Prepare the Oven and Muffin Tin
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.
Step 2: Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, almond flour, granulated sugar, brown sugar, salt, baking soda, baking powder, and cinnamon.
Step 3: Prepare Wet Ingredients
In a separate bowl, whisk the eggs, milk, vegetable oil, and vanilla extract until well combined.
Step 4: Combine Wet and Dry Ingredients
Gradually add the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix to keep the muffins light and fluffy.
Step 5: Fold in Additions
Gently fold in the cherries, dark chocolate chips, and sliced almonds.
Step 6: Fill the Muffin Tin
Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Step 7: Bake
Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
Step 8: Cool and Serve
Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
