For the Vegetables:

  • 1 zucchini (sliced into half-moons)
  • 1 cup mushrooms (sliced)
  • 1/2 onion (sliced)
  • 1/2 red bell pepper (sliced)
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper

For the Yum Yum Sauce:

  • 1/2 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tsp rice vinegar
  • 1 tsp sugar
  • 1/2 tsp paprika
  • 1 tbsp water (to thin out, if needed)

Instructions

  1. Prepare the Chicken:
    • In a bowl, mix the chicken with soy sauce, sesame oil, garlic powder, onion powder, ginger powder, salt, and black pepper.
    • Let marinate for at least 10 minutes (or up to an hour for more flavor).
  2. Prepare the Vegetables:
    • Toss the zucchini, mushrooms, onion, and bell pepper with soy sauce, olive oil, garlic powder, and black pepper.
  3. Cook in the Air Fryer:
    • Preheat air fryer to 380°F (193°C).
    • Add chicken to the air fryer basket in a single layer. Cook for 10 minutes, shaking the basket halfway through.
    • Add vegetables and cook for another 8-10 minutes, shaking once more for even cooking.
  4. Make the Yum Yum Sauce:
    • In a small bowl, mix mayonnaise, ketchup, rice vinegar, sugar, and paprika until smooth.
    • Add water if needed to reach the desired consistency.
